Just Give Me the Recipe… Thai peanut yam buddha bowl

  • Recipe inspired by the original recipe from whitneybond.com
  • at least 4 servings
  • Total: 30min — Prep: 15+ min
  • This recipe is part of another project of ours, the 195 Challenge: cook one recipe inspired by various regions in the world. This is recipe #16/195.
  • Main take away? (1) The Thai peanut butter sauce is really easy to make, and very tasty. (2) Korean yam can be a great substitute to regular yam or sweet potatoes.
  • Will we do this recipe again? Main advantage? Yes, because the combination of these well known ingredients still lead to a unique taste.
  • Main disadvantage? Cutting and baking the yams really takes some time to process: this is a recipe to do during your weekend when you have some free time to devote to a new recipe; cook extra for work week leftovers.
